A strong answer goes beyond the cliche of 'UX is how it works, UI is how it looks' and describes UX as encompassing the entire user journey (research, information architecture, interaction flows, content strategy, usability) while UI covers the visual execution (color, typography, component design, visual hierarchy). On a product team, they interact constantly: good visual design reinforces UX intent (color draws attention to primary actions), and bad UI can undermine a well-structured UX (a confusing visual hierarchy makes a logical flow hard to parse). Bonus for noting that many product designers do both.
